Happy times here on the home front.
Family and friends are gathered near.... lots of food and laughter... and then more food.
Here is my family's recipe for peanut butter fudge ... we are all addicted to it.
Along with Chex mix and cookies, we are on the third batch of PB Fudge.
Don't make it if you don't want to eat a bunch!
Use a deep sauce pan and a good candy thermometer. Get your ingredients ready.
Be Patient.
In the sauce pan, stir 3 cups sugar
pinch salt
1 1/2 cups milk
Turn on low heat, without further stirring, bring mixture up tp soft ball stage (236 to 240 degrees)
THIS IS SO IMPORTANT ... BE PATIENT ... THIS TAKES A WHILE.
Remove from heat and stir in 1/4 cup butter
1 tsp vanilla
1 cup creamy peanut butter (more if desired)
1/2 cup whipped marshmallow cream (more if desired)
Quickly scrap into a 9 x 9 dish. Some lucky person will be able to scrap the remaining last bits of fudge from the pan and the spatula used to stir this yummy PB fudge.
